Arancini – are stuffed rice balls that are coated with breadcrumbs, and fried. Arancini are usually filled with ragù (meat sauce), tomato sauce, mozzarella, and/or peas. Although there are various fillings and shapes of that delicious balls, like arancini con burro (béchamel sauce), or specialty arancini, such as arancini con funghi (mushrooms), con pistacchi (pistachios), or con melanzane (aubergine).
You’ll find arancini sold as street food throughout the Italian peninsula, but they truly belong to Sicily. They’re just plain delicious.
